Romanesco & Chickpea Salad

Two things happened on Monday: It was Jack’s birthday and also we won the Saveur Reader’s Choice Best Cooking Blog award! Thank you, thank you, thank you, to all of you who voted for us! As someone who’s not used to winning things, I really didn’t see this coming. I’m shocked and just so flattered. I realize — I probably should be posting cocktails and cake, but it’s been a heck of a busy week, so today I bring you: Celebration Salad. (Although, stay tuned, I have some yummy birthday carrot cake coming up next week). But for now, this…

Spring Root Veggie Salad

Make this watercress salad for a healthy spring meal! I love how the soft greens contrast with colorful root veggies in this refreshing, delicious dish.

Since starting this blog, I’ve gotten over a number of foods I didn’t think I liked: radishes, carrots, and, most recently, pepper. (I know, pepper is a weird one). I have a list going for Jack too: peas, asparagus, avocado. Check, check, check. And now – with this watercress salad – beets! (Yes, Jack, I lied. These things I told you were turnips were in fact beets). My husband is not a picky eater by any means — there are about five foods he’s adamant about not eating. I just find it a fun game to work these things in.…

Cold Sesame Noodles w/ Kale & Shiitakes

I may call this a noodle salad, but secretly it's a kale salad, too. Made with sesame dressing and lots of sturdy veggies, it's perfect packed for lunch.

They say breakfast is the most important meal of the day, but I think Monday lunch is the most important meal of the week. If I’ve destroyed myself indulged a little too much over the weekend, I like to recover with a good healthy Monday lunch. Start the week off right, and it’s easier to make healthier choices throughout the week. I’m also trying to make more meals in advance (I’m hoping these kinds of recipes are helpful for you too). This is a noodle salad, but secretly there’s a kale salad hidden in here as well. I like to…

Roasted Broccoli Bowls

…otherwise known as “roast what you have” bowls. This week (again) was all about quick cooking, olympic watching, and dinners that fit into one bowl. Which sounds super lazy, but I just know that I’ve burnt more than a few calories anxiously watching athletes go for gold. Anxiety is an ab workout right? This TV “workout” was fueled by some roasty-toasty broccoli and sweet Farmhouse carrots that I happened on hand. I completed the meal with the help of some pantry ingredients: chickpeas, jarred roasted red peppers, tahini, etc. Feel free to switch up the vegetables and add some sort…

Brussels Sprout, Broccoli & Avocado Rice

Brussels sprouts, broccolini & scallions tossed with a tangy & spicy citrus sriracha dressing and topped with creamy avocado! (Gluten-free, Vegan option).

I’m pretty sure this one covers all of my major food groups: green vegetables, avocado, almonds, mint, lime & sriracha. In fact, I could probably stop right here and live happily ever after. I could change our name to The Brussels Sprout Blog and take pictures of this dish – every day – just in a different bowl (you know, to keep things exciting). Of course, I’m kidding, but I do really love this combo. What really pulls it together is the fish sauce (don’t worry, if you’re vegetarian you can sub it out), but it really brings the most amazing…

Kale & Apple Butternut Squash Salad

Kale & apple butternut salad is a perfect healthy fall dinner or Thanksgiving side. Butternut ribbons add fun color and texture to this delicious dish.

We’re on a butternut squash kick this week. It wasn’t intentional, it’s just that one butternut squash times two people equals about four meals. It’s a squash that keeps on giving. Today’s special shape: ribbons! No special gadgets required – just get out your regular veggie peeler, and peel away. Toss with a tangy dressing (it’ll help tame down the raw bite), and toss with kale, apples, herbs and nuts. If this is all too green and healthy for your traditional Thanksgiving meal, just think of it as your pre-turkey-day (delicious) detox!

Sweet Potato Quinoa & Cotija

Our dinner has looked like this nearly every night for a week. I don’t know what it is, but as soon as fall hits, big grain salads with roasted sweet potatoes seem to take over my life. They’re perfect for busy weeknights, next day lunches… and you can prep most of the ingredients ahead of time. You can take this in so many different directions (this was last year’s obsession, and yes, it’s somewhat similar)… but I especially love this one with chile-lime dressing, mutli-colored quinoa and crunchy pepitas. It could even be a fun non-traditional thanksgiving side dish if…

Miso Sesame Squash Salad

Does anyone else have a fascination with grocery stores in other countries? In Japan, we spent lots of time at food markets, but we spent countless hours wandering the aisles of grocery stores. It was so fun just trying to figure out what everything was. I collected non-perishable(ish) items to bring back – miso pastes, spice mixtures, etc… We also had a short list of items to get for a very good Japanese friend back home. A few of them were a little hard to find – buttered peanuts, and a specific brand of salad dressing. She eventually sent us some photos so…

Grilled Veggies with Basil Miso

The “summer’s not over yet” recipe theme continues. Right now Jack and I are in Seattle for a few days before we head to Japan. I feel inclined to write about how we spent the last few weekends at home savoring the last of our local late-summer produce… But seriously, it was 104 degrees when we left so I’m sure there will be plenty of summer (and it’s veggies) waiting for us when we get back. With Japan on the brain, I’ve been in the mood for miso. Although, I realize nothing else about this recipe is remotely Japanese… the…

Heirloom Tomato & Avocado Salad

This is the part where I get sad about the inevitable end of summer. Granted, my back-to-school days are long gone, and it’ll be another four months before I’ll have to so much as think about a sweater. The part I’m not ready to let go of is the bright colorful food. My eyes are not ready to adjust to the shade of pumpkin (as much as I love it)… just yet. Lately, I’ve been consuming these gorgeous Whole Foods heirloom tomatoes by the basket-full. They work well in this particular salad because each type is a little bit different. Some…

Grilled Potato & Arugula Salad

I might be from the land of meat and potatoes, but you all know how that my heart lies with the green stuff. I rarely eat potatoes, but I just couldn’t pass up these little cuties. And since it’s summer, I felt I needed to share a true picnic/cookout side dish. These little ones grill up so well – they cook through without having to boil them first, and they get that nice charred edge. Off the grill, I drizzled them with a lemony dijon dressing. I let that soak in for a bit and then tossed them peppery arugula,…
